How Are Russian Crepes Different From The French Type?

Crepes are an international delicacy. Sweet or savory, they're popular in many cultures in one form or another. From the ricotta-filled crepes used in Italian crespelle to the Japanese crepes served as a cone, this thin pancake has myriad uses.

Two of the most common types are Russian and French crepes. Both can be used for sweet or savory dishes simply by adjusting or omitting the sweetener in the recipe and altering the fillings. Yet there are several differences between the two that are worth remembering.

Both Russian crepes, also known as blinis, and French crepes are typically made with simple pantry staples: all-purpose flour, eggs, milk, salt, and butter. Occasionally, you will find a recipe for Russian crepes that includes yeast for added lift or one that uses nutty, flavorful buckwheat flour. Even though both kinds of crepes usually contain the same basic ingredients, the ingredient proportions for each type are different, resulting in a markedly different end product.

Toppings and fillings vary between the two styles

Russian crepes tend to be fluffier than their French counterpart, especially when yeast is added to the batter, which makes their texture similar to that of a pancake. Think of them as amped-up pancakes. In fact, if you find yourself in a pinch, blinis can be made using pancake mix if the batter is thinned with water.

Traditionally, blinis are served open-faced and are often topped with Russian favorites such as caviar or smoked salmon, but it's not uncommon to find them filled with jam for a sweet treat. French crepes can be sweet or savory as well, though you're more likely to find the crepe folded into quarters. This style is also often filled with delicious goodies such as fresh strawberries, Nutella, or gourmet cheeses.

If you want to make Russian or French crepes, be sure to avoid some of the mistakes cooks make with pancakes. Make sure you allow the batter to rest, then preheat your pan and grease it well. After you've slid your beautiful crepe onto a serving plate, the fun part begins when you choose your fillings.
