Now that the holiday season is over, we could all use a breather on baking pies, cookies and cakes. However, there are still birthday parties, school bake sales and other celebrations that require a tasty dessert. Thankfully, you can make delicious desserts without even turning on the oven. Banana Nut Snack Bars, Sweet & Salty Cheerios Bars and Chocolate Chip Cookie Bars can all be made without baking.
Banana Nut Snack Bars
What You Need
3 tablespoons margarine or butter (do not use spread or tub products)
1 bag (10.5 oz) miniature marshmallows
6cups Banana Nut Cheerios cereal
1/3 cup roasted sunflower nuts
¼ cup semisweet chocolate chips
1 teaspoon canola oil
Directions: Spray a 13 by 9 inch pan with cooking spray. In large microwavable bowl, microwave margarine uncovered on high for about 30 to 45 seconds, or until the margarine is fully melted. Add the marshmallows; toss until coated. Microwave marshmallows and margarine on High for 1 minute 15 seconds to 1 minute 45 seconds. Stop and stir every 30 seconds, until the mixture can be stirred smooth.
Next stir in the Banana Nut Cheerios and sunflower nuts until well blended. Press evenly in pan. Then in a smaller microwavable bowl, microwave chocolate chips and oil uncovered on High for approximately 45 to 60 seconds, stirring very 15 seconds until melted and smooth. Drizzle over bars.
Cool about 1 hour or until glaze is set before serving. For bars, cut into 6 rows by 4 rows. Store loosely covered.
Sweet & Salty Cheerios Bars
What You Need
4 cups Honey Nut Cheerios cereal
1 cup dry-roasted peanuts
1 cup candy-coated chocolate candies
1 cup pretzel sticks, coarsely broken
1/3 cup packed brown sugar
1/3 cup light corn syrup
1 tablespoon butter
Directions:Line bottom and sides of an 8-inch square pan with foil or parchment paper. Spray foil or parchment paper with non-fat cooking or baking spray. In a large bowl, mix cereal, peanuts, chocolate candies and pretzels, and then set aside.
In large microwavable bowl, microwave brown sugar, corn syrup and butter, uncovered, on High for 2 to 3 minutes, stirring every 30 seconds, until mixture is boiling. Microwave an additional 1 minute allowing mixture to boil and thicken slightly. Let stand 3 minutes to cool a little more.
Next pour the liquid over cereal mixture in bowl; stir until evenly coated. Butter the back of a large spoon and press mixture very firmly in pan. Refrigerate for about 1 hour or until firm enough to cut.
Cut into 4 rows by 4 rows to create bars. Store covered at room temperature up to 1 week.
Chocolate Chip Cookie Bars
What You Need
4 cups Chocolate Cheerios cereal
1 cup old-fashioned or quick-cooking oats
½ cup creamy cookie butter or cookie spread
½ cup honey
¼ cup packed brown sugar
½ cup miniature semisweet chocolate chips
Directions: Line the bottom and sides of an 8-inch square pan with foil or parchment paper. Spray foil or parchment paper with cooking or baking spray. In a large bowl, mix cereal and oats, then set aside. In a large microwavable bowl, microwave cookie butter, honey and brown sugar uncovered on High 2 to 3 minutes, stirring every 30 seconds, until mixture is boiling and slightly thickened.
Next pour over cereal mixture in bowl and stir until evenly coated. Gently stir in chocolate chips. Using buttered back of spoon, press mixture very firmly in pan. Refrigerate about 1 hour or until firm enough to cut.
For bars, cut into 4 rows by 4 rows. Store covered at room temperature for up to 1 week.
