30 Minute Meals: Ginger Pork Loin Rolls

Tired of eating hamburgers and deli sandwiches? If you are up for a different kind of sandwich, look to the East for new flavors and textures. I’m talking about Asian-inspired Ginger Pork Loin Rolls. My husband could eat hamburgers almost every day of the week, but my daughter and I quickly tire of eating the same old hamburgers and turkey and swiss subs. Thankfully, our whole family loves pork, so it was not a hard sell to get them to sign on to Ginger Pork Loin Rolls. We’ve made these as a stand-alone lunch, as a dinner entree paired with a vegetable like asparagus or broccoli, or as a compliment to rice or stir fry. It’s even a pretty good lunch.

To make great Pork Loin Rolls, it’s important to choose a good cut of meat. Fortunately pork loin tends to be frequently discounted at the supermarket. Select a loin that has little fat. Before preparing the meal, cut off most of the fat. The pork loin should be lean and sliced thin. The thin slices make the cook time minimal.

Golden raisins are an underutilized source of flavor. Golden raisins have more moisture and softness than black raisins. They have a pleasingly sweet taste and a nicer texture than the raisins you are used to. Sun-Maid California Golden Raisins are my favorite brand for non-baking recipes. Golden raisins have all of the health benefits of raisins, and have additional positives like being low fat and having antioxidant properties.

What You Need

3 Tablespoons soy sauce
1 Cup of water
2 Teaspoons ground ginger
2/3 Cup golden raisins
1/2 Cup coarsely chopped red onion
1/4 Teaspoon of black pepper
1 pound pork loin, thinly sliced
8 split rolls or mini-hamburger buns
1 small cucumber, thinly sliced

Directions: Begin by combining one cup of water and 3 Tablespoons of soy sauce in a large skillet, with the ginger, raisins and onion. Cover the skillet and bring the mixture to a simmer using a medium high heat. Simmer the liquid for 5 or 6 minutes, or until the raisins are plumped and the onions are tender and caramelized. Transfer the golden raisins and onions to a small bowl and then season with the pepper.
Next add the sliced pork to the cooking liquid in the pan. Simmer the liquid uncovered for 7 or 8 minutes or until the pork is just cooked through. There should only be a trace of pink remaining. Turn the pork one time during cooking. When ready, remove the pork with a slotted spoon.

To build your sandwiches, use hamburger buns or rolls. Add the cucumber slices, raisin and onion mixture, and pork, and serve.

Leftovers: Cook up an extra pound of sliced pork if you want to have enough for an extra meal. Then, cook Jasmine rise and top with the cucumbers, golden raisins and pork. You can serve this cold or heated. Some people also like to reheat this meal in a wok, creating a stir fry. If you try this, you will find that the flavor of the meat is even better after it marinates overnight.
